Easy Fresh Spinach & Mushroom Crisp: by True Foodie
Take a whole wheat tortilla, place some roughly chopped fresh spinach over all of it, followed by a sprinkling of fresh portobello mushrooms, and topped with your favorite cheese. I used a cheddar/jack combo. I then drizzled the top with a smidge of olive oil and hot oil. I baked it in the oven at 400 for about 12 minutes. Healthy, yummy goodness :-)
